Artesano Begins Brewing Mead Made in Vermont!

After a long and wet spring and summer, the bees finally had a chance to bring in their crop, thanks to a solid four weeks of sun that began in late August. The bees give us an indication that the honey is ready by placing a delicate cap of white wax over the cell that contains the ripened honey. This tells us that the transformation from nectar to honey is complete, and that it is at the ideal consistency and perfect level of sweetness.

 

 

The honey then goes from the hive directly to our fermentation vessels so that we don’t lose any of the delicate aromas or flavors that are inherent to fresh honey. This ensures that we preserve the terroir of the wine which gives our mead its unique taste that can only be found here in Vermont. The majority of this year’s flavor will be from late spring wild flowers, clover and just a small hint of goldenrod.

 

 

This marks the first batch of traditional mead that will be fermented, aged and bottled at our new facility located in Groton, VT. We still have some time to go before it is ready for sale, but every long journey begins with the first step. The mead will complete its fermentation process within a month, followed by racking and ageing, which will last about a year.
